Peanut Chicken


I love Peanut Chicken but the original recipe I was given was extremely unhealthy. I made some changes in order to eliminate heavy cream from the recipe. In addition to being a quick week night meal, it is also very inexpensive to make. Even if you have to purchase every ingredient you will only spend about $30 to serve 4 people.

You will need:
1 lemon
1/2 cup soy sauce
3 cloves of chopped garlic
2 pounds of chicken breasts
1 tablespoon olive oil
4 tablespoons peanut butter (chunky or smooth)
1 tablespoon butter
1 tablespoon flour
2 tablespoons soy sauce
1/2 cup whole milk
1 tablespoon sugar
5 drops hot sauce (or to taste)

Step 1
Marinate the chicken. Squeeze the juice from the lemon, and combine with 1/2 soy sauce and chopped garlic. Pour over the chicken breasts and let marinate for 20-30 minutes. Do not marinate for longer than 30 minutes because the chicken will get too salty.

Step 2
Preheat the oven to 300 degrees. Pour a tablespoon of olive oil into a frying pan. Over high heat add the chicken breasts to the pan quickly searing each one. It will take 1-2 minutes a side. Once the chicken is browned, put it on a baking sheet and into the oven. Cook for 40 minutes or until done.

Step 3
Over low heat melt 1 tablespoon butter in a sauce pan. Then add 1 tablespoon flour and mix together. Add 4 tablespoons peanut butter. Make sure that the burner is set to low, and be careful not to heat the peanut butter too much or it will separate. Once the peanut butter is melted, add 1/2 cup whole milk, 2 tablespoons soy sauce, and 1 tablespoon sugar. Stir together.

Step 4
Slowly bring the sauce to a boil. Stir constantly as the sauce thickens. After about a minute of boiling the sauce will become nice and thick. Then add hot sauce to taste.

I serve this with linguine. Pour the sauce over the chicken and the pasta and enjoy!

I also made a video demonstrating how to make this meal. I learned how incredibly difficult it is explain what you are doing while you are doing it. I am slightly nervous to share this with the world, just go easy on me, I am sure my videos will get better with time.
