Avocado Fries

Avocados are delicious. Breading and pan frying them makes them even better. Carefully cutting the avocado strips is the hardest part of this recipe.

You will need:
Avocados (figure 1/2 avocado per person)
Panko (Japanese breadcrumbs)
Eggs
Salt
Pepper
1 cup Mayonnaise
1 lime
Olive oil

Step 1
Cut the avocados into strips. First cut in half, remove pit, then while still in the skin use a knife to cut the avocado into strips. Use a spoon to remove the avocado strips from the skin.

Step 2
Warm 2 tablespoons olive oil in a frying pan over medium heat. Put 1 cup Panko in a bowl, mix in salt and pepper. Crack 2 eggs into a bowl and whisk.

Step 3
Assemble and cook the fries. Individually take each piece of avocado and dunk it into the Panko, then the egg, then back into the Panko. You can press the avocado into the Panko so it sticks. Then add to the frying pan, cook until brown on each side. Put finished fries into the oven at 250 degrees to keep them warm while you cook more.

Step 4
Once all the fries have been made make the dipping sauce. Combine 1 cup Mayonaise with the juice of 1 lime. Take the fries out of the oven and serve!
