Guacamole

I love avocados and therefore I really like guacamole.  Hopefully this recipe will convince you to throw those seasoning packets away; it is easy to make a flavorful guacamole without them.  The fresh lemon and lime juice in my recipe make for a refreshing dip.

I made this last night when my friend Cheryl invited some ladies over for a girls only taco night.


You will need:
4 Avocados
1/2 cup chopped Tomato
1 Lemon
1 Lime
1/2 cup finely chopped Red Onion
1/2 teaspoon Salt
Personally, I am not a fan of Cilantro but feel free to add it.

Step 1:
Cut the avocados in half.  Remove the pits.  If you are not going to eat the guacamole right away, save a pit and add it back in the guacamole when finished, the pit will help prevent the guacamole from turning brown.  Scoop the avocado out of the skin and into a medium bowl.  Mash with a fork or a potato masher.

Step 2:
Squeeze the juice from the lemon and lime into a small bowl.  Remove any seeds from the juice and add to the avocado.  Then add the salt and the chopped tomato and onion.  Stir and enjoy with your favorite chips!
